Glazed Strawberry Muffins

Glazed Strawberry Muffins

Instructions

Pre-heat your oven to 350. In a large bowl combine flour, salt, and baking powder. In a separate bowl, combine sugar, milk, egg, oil, vanilla extract, and melted butter. Once the ingredients in each bowl are completely mixed, add the wet ingredients to the dry ingredients. Next sauté your 2 cups of strawberries in a pan with a tablespoon of butter, and a half teaspoon of cane sugar. Once they are soft and simmering gently fold the strawberries into the batter. Line your cupcake pan and fill each liner with batter. Cook until edges are a golden brown. (You can also stick a toothpick in the center to test that the batter is cooked). During the cooking process, prepare your glaze by combining 2 cups of powdered sugar, 2 tablespoons of melted butter, 1/3 cups of finely diced strawberries, and 1-2 teaspoons of milk. (continue to stir until glaze liquifies). Allow cupcakes to cool once completed. Finally drizzle your glaze as desired.

  • 1 teaspoon of Vanilla Extract

  • 2 cups of flour

  • 2 teaspoons of Baking Powder

  • 1/4 teaspoons of Pink Himalayan Salt

  • 2 cups of diced Strawberries

  • 3 teaspoons of melted butter

  • 2 cups of Powdered Sugar

  • 2 tablespoons of Melted Butter

  • 1/3 cup of finely diced Strawberries

  • 1-2 teaspoons of Almond Milk

Instructions

Pre-heat your oven to 350. In one bowl combine oats, baking powder, salt, cinnamon, and sugar. In another bowl combine eggs, milk, and olive oil. Mix both bowls well. Combine your wet ingredients with the dry ingredients and at this point you can add any additional ingredients that you’d like. Transfer your mixture to a greased baking dish and allow to cook until edges are brown and its solid. (use a toothpick to check). Once your bake is done, you can add anything to top it off.

  • 1/3 cup of light brown sugar

  • 2 teaspoons of baking powder

  • 1 teaspoon of pink himalayan salt

  • 1 teaspoon of cinnamon

  • 1/4 cup of olive oil

  • 3 eggs

  • 1 1/2 cups of almond milk

  • Add ins (nut butters, fruit, etc)

Strawberry Fruit Roll-Ups

Intructions

Pre-heat your oven to 140 (or as low as it will go) and prepare a baking sheet with parchment paper. In a food processor or blender, puree your fruit, honey, and lemon juice until it’s smooth. (no lumps). Pour fruit puree onto the baking sheet evenly and place in the oven. Bake for 4-6 hours or until it is no longer sticky. Once it is done, allow it to cool for 15 minutes. Place the dried fruit on a large sheet of wax paper and cut it into 1 inch strips. Roll them up and tie them with ribbon of choice.

Ingredients

  • 7 crushed graham crackers

  • 1 cup of chocolate chips

  • 1 cup of marshmallows

  • 1 stick of butter (melted)

  • 1/2 teaspoon of cinnamon

  • 1/2 teaspoon of honey

  • 1 tablespoon of coconut oil

 

Instructions

Prepare a small pan with parchment paper. Crush 7 graham crackers and add melted butter, honey, and cinnamon. Mix well. Mash the mixture into the bottom of the pan and chill for about 45 minutes. Melt 1 cup of chocolate chips with 1 tablespoon of coconut oil in the microwave for 30 second increments. Pour the chocolate onto the graham cracker crumbs and spread evenly. Chill for about 1 hour. Melt marshmallow with 1 tablespoon of water in the microwave for 15 seconds. Pour marshmallows onto chocolate and spread evenly. Chill for about 1 hour. Cut into bars and enjoy. You can store in the freezer or fridge.

  • 2 2/3 cups of whole wheat flour

  • 2 teaspoons of baking powder

  • 3/4 cup of cane sugar

  • 1/3 cup of melted butter

  • 1/3 cup of olive oil

  • 3 medium bananas

  • 2 eggs

  • 1 cup of almond milk

  • 2 teaspoons of vanilla extract

  • 1 teaspoon of cinnamon

  • Chocolate chips

 

Instructions

Preheat your oven to 350 and prepare a cupcake pan with liners. In a bowl combine flour, Baking powder, Sugar, And cinnamon (mix well). In another bowl combine eggs, Milk, Melted butter, Olive oil, And vanilla extract (mix well). Combine the wet ingredients to the dry ingredients, Mix well and set aside. On a plate mash 3 bananas completely and fold them into your batter! This is also when you can add a small handful of chocolate chips. Take spoonfuls of your batter (which will be a little thick) and add them to your liners. Fill each one to the top and add a few extra chocolate chips to them. Bake until you are able to stick a toothpick through a few and it comes out clean.

Ingredients

  • 1 cup of oat flour

  • 2 cups of oats

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon pumpkin spice

  • 1/2 teaspoon sea salt

  • 6 tablespoons olive oil

  • 1 teaspoon vanilla

  • 2 tablespoons butter (melted)

  • 1 cup cane sugar

  • 2 eggs

  • 1/2 banana (mashed)

  • 2 tablespoons pumpkin puree

 

Instructions

Prepare a cookie sheet with parchment paper and preheat your oven to 350. In your blender blend up your cup of oats (to make flour), baking powder, cinnamon, pumpkin spice, nutmeg, and sea salt. Transfer the mixture to a bowl and add 2 cups of oats and sugar (mix well). In a separate bowl combine your eggs, olive oil, vanilla, melted butter, banana, and pumpkin puree (mix well). Combine your wet ingredients with your dry ingredients, mix well and form cookies as desired.

tip: sprinkle them with a little sea salt right before going into the oven!

  • 1 teaspoon sea salt

  • 3/4 cup cane sugar

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon pumpkin spice

  • 1/2 teaspoon nutmeg

  • 1/3 cup melted butter

  • 1/3 cup olive oil

  • 1/2 banana (mashed)

  • 2 eggs

  • 1 cup almond milk

  • 1 teaspoon vanilla

  • 1 tablespoon pumpkin puree

  • chocolate chips for topping

Prepare a cupcake pan and preheat your oven to 350. In your blender blend up your oats to create oat flour, Once blended add baking powder, sea salt, cinnamon, pumpkin spice, and nutmeg to the blender and blend until everything is combined. Transfer the mixture to a bowl and add cane sugar. In a separate bowl combine milk, eggs, melted butter, olive oil, banana, vanilla, and pumpkin puree (mix well). Combine the wet ingredients with the dry ingredients and mix well of course! fill each cupcake holder to the top with your mixture and add chocolate chips as desired. To test your muffins be sure to use a toothpick OR butter knife.
